Have just picked some lovely bunches of Rhubarb, think Ill whip up some mascarpone cream, and stew some rhubuarb in a light orange syrup.
Recipe rhubarb compote with some sticky gingerbread cake 1 pint of orange juice sugar to taste 2kg of rhubarb 1 tub of mascarpone cheese 500ml of cream sugar to taste 1 ginger bread cake , ill give you a recipe, but if your in a hurry just buy one. Ginger bread cake 1 tea spoon of ground ginger 2 tea spoons of fresh ginger 125gram brown sugar 200gram treacle 200gram golden syrup 250ml milk 2 eggs 1 tea spoon bi carb/ 2 table spoons of warm water 300 gram of flour So melt butter.sugar/ spices and syrups. Cool Add 2 tablespoons of warm water to soda bi carb , add to milk and eggs, add to above, then slowly add flour. Pour into a lined tin and bake at gas3 or 170 for 40 minutes. Cool. This cake freezes very well. wash rhubarb, and slice thinly, pour orange juice over rhubarb, I used 200gram of sugar, gently stew until soft.Cool before layering. Whip up mascarpone with cream and sugar. slice cooled gingerbread cake. Now using individual glasses or one large bowl, layer, first rhubarb then mascarpone finally ginger cake. Yummie can be made in advanve, super for dinner party.
